Raw Pad Thai Salad
This recipe uses kelp noodles which are a great alternative to rice or wheat noodles. Adding sea vegetables to your diet is an excellent way to ensure you are getting your recommended daily intake (RDI) of iodine. Iodine is required for the adequate functioning of the thyroid gland.
The thyroid gland produces hormones that regulate the body's metabolic rate as well as heart and digestive function, muscle control, brain development, mood and bone maintenance. Its correct functioning depends on having a good supply of iodine from the diet.
Ingredients
1 packet kelp noodles
1 tsp sesame oil
2 cups purple cabbage, shredded
1 large carrot, grated
1 large zucchini, grated
4 spring onions, sliced
1/2 cup coriander, chopped
1/2 cup cashews, chopped
1/2 cup mint leaves, chopped
1 long red chilli, finely sliced
Dressing
1/4 cup extra virgin olive oil
1/2 cup tahini
3 tbsp tamari
1 tbsp honey
1/4 cup apple cider vinegar
1 lime, juiced
1 tbsp ginger, grated
Directions
Rinse and drain noodles and toss with sesame oil.
Combine noodles, cabbage, carrot, zucchini, spring onions, coriander, cashews, mint and chilli in a large serving bowl.
Blend dressing ingredients in a high-speed blender until smooth.
Toss dressing through the salad, sprinkle with sesame seeds and serve.
