Super Simple Salad
My super simple go to salad. Perfect for those on the go & can be easily modified to suit your taste preferences. Full of resistant starch & fermented veg to feed those gut microbes, as well as healthy fats & essential vitamins & minerals.
Ingredients
Roast veggie mix: carrot, potato, brussels sprouts, pumpkin, beetroot, zucchini
Rocket &/or spinach
Avocado
Sauerkraut (I love Kehoe's Kitchen Beetroot & Ginger)
Hummus
Dukkah, sesame & sunflower seeds, pepitas
Dressing options:
Lemon juice + EVO
Tahini dressing (refer to my recipe)
Directions
Roast vegetables with EVO + herbs & spices of your choice. (These can be pre-made & stored in the fridge.)
Add a good handful of rocket & a cup of roast veggies into a bowl.
Top with sliced avocado, sauerkraut, nut/seeds & dukkah.
Add a tbsp of hummus and drizzle you fav dressing over the top.
